Actually, I think it is the opposite... Sleep Paralysis demons came first... Sleep Paralysis is something that does exist: People sometimes awake (or dream they are awake) without recovering control of their motor functions, so they are aware (or dream they are aware) of their surroundings without being able to move, and they panic, and sometimes that is combined with a sense of danger, that something very wrong and evil is there stalking you and you must escape but you can't...

Ancient/Medieval people would of course think that was a curse from a witch or an attack from a demon, and the Church added the sexual aspects later (combining it with wet dreams, a completely different, completely unrelated phenomenon), creating the Succubus/Incubus lore, because, hey, if a witch or a demon attacks you, it must be something sexual, right? RIGHT?! Because sex is evil and evil is sexual!
